Slow Cooker Chicken

I used to spend lots of money on boneless skinless chicken breasts.  That was a few kids and a bigger budget ago.  These days I usually purchase whole chickens and cook them in a slow cooker.  I can get two sometimes three meals, for my family of seven, out of one whole chicken depending on what I make with it.  After the chicken is cooked I have the kids debone the chicken.  I have them take the breasts off whole to cut into cubes and shred the rest.  Then the bones go back into the slow cooker get covered with water to become home made chicken stock. Makes about half gallon worth of stock.

Ingredients
for chicken

1 whole chicken
salt to taste
pepper to taste
any other seasoning you care to add

for stock
1 lg onion  cut into large chunks
1 cup of baby carrots
2 celery stalks or not (my hubby doesn't like celery ;)

Cook chicken on high for 2.5-3 hours.  Allow chicken to cool.  Debone chicken putting bones back in the slow cooker. add ingredients for stock.  Cook in a slow cooker on high for 8-10 hrs.  Allow to cool. Strain out vegetables and discard store stock in refridgerator.  I use a half gallon mason jar for storage.
